Ingredients:
– 1 cup Greek yogurt
– 1 cup all-purpose flour
– 2 tablespoons sugar
– 2 teaspoons baking powder
– 1/4 teaspoon salt
– 1 large egg
– 1 tablespoon melted butter
Instructions:
- In a bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the Greek yogurt, egg, and melted butter.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Heat a non-stick skillet or griddle over medium heat.
- Drop the batter by 1/4 cupful onto the skillet or griddle.
- Cook for 2-3 minutes, until bubbles appear on the surface and the edges start to dry.
- Flip and cook for another 1-2 minutes, until golden brown.
